Blue Dragon Fish

(I named this after the brand of sauce I used- it's not really made with dragon fish!)

Tonight I made grilled fish with steamed veggies.
I had something like this a couple of weeks ago at Chili's and it seemed simple enough to make at home. A couple of days later we went to World Market to find a good sauce to top the fish. The recipe goes a little something like this:

4 talapia fillets
soy sauce
Blue Dragon Sweet Chili Dipping Sauce

Marinate fish in mixture of soy sauce and sweet chili sauce. Grill (I used a grill pan on the stove) about 4 minutes per side, on medium-high heat. Serve with extra dipping sauce.

Curry Chicken Strips

Tonight I made one of our favorites: Curry Chicken strips

They are simple to make and healthier than the usual fried chicken nuggets.

Here's how I make them:

1 lb chicken
2 Tbsp Mild Curry Powder (the yellow kind)
about 1/2 cup light mayonnaise
a little water to thin
bread crumbs (I usually have italian sytle on hand)

Cut boneless, skinless chicken breasts into strips and marinate in mixture of curry powder, mayo, and water for about a half hour (I rarely wait this long).

Coat with bread crumbs and place on cookie sheet on top of Reynolds Release Foil (love this stuff- nothing sticks!)

bake in 350 degree oven for 20 minutes, turning after 10 minutes.

William loves these, even though they are a little spicy!

Lo Mein Stir Fry

Tonight Josh cooked us up a Lo Mein Stir Fry.

Here's how he did it:




1/2 lb sliced beef

chopped veggies such as broccoli, green pepper, brussels sprouts (chopped up), green onion, green beans, bean sprouts, mushroom, carrots, 1 clove garlic-crushed, 1 tsp fresh ginger root-peeled and grated

sauce ingredients:

2 Tbsp Hoisin Sauce
2 Tbsp Soy Sauce
1 tsp chili garlic sauce (this is spicy, so use more or less, depending on your heat preference)
1 tsp sweet chili sauce
fresh grated ginger
oriental seasoning from ramen noodle (about 1/4 packet)
a little water to thin

Brown beef in some olive oil with garlic and ginger. Add vegetables and stir fry for 10 minutes or so. We add a little water and put the lid on the wok so the vegetables will steam a little bit. Meanwhile, in separate saucepan, combine and heat sauce ingredients. In another pan, boil 3 packages ramen noodles about 3 minutes. When meat and veggies are cooked add the sauce and noodles to the mixture and cook another minute or so, tossing well.

The kitched still smells good!

No Food for You

Tonight we ate at Jazz- A Louisiana Kitchen with good friends Jaimee & Alicia, and Mikayla & Heath. Josh had "bugs and beer" (boiled crawdaddies). I had fried shrimp and oysters. It was gooooood. Thank you to Grandma Joy for babysitting!! William had a good time with his Grandma and Grandpa.

Stuffed Green Peppers

Tonight we made stuffed peppers. We eat these a lot in the summer to use up the green peppers from our garden. I haven't made them the same way twice.

Southwest Roast

Josh cooked this meal for dinner tonight. I can't believe we ate the whole thing.........
This is Josh blogging on the menu board this evening. I would like to share with everyone this easy recipe that we acquired from Lisa's older sister, Amy. She is one hell of a cook. I never eat so good as when we go visiting. It is one of those recipes that actually takes less than ten minutes to prepare and is very tasty, as is everything cooked in a crock pot.

You will need a large cut of meat, an onion, and about 4 cloves of garlic and a lime.
You will also need a few spice: ground cumin, paprika, chili powder, and coriander.
4-5lb beef roast
1 onion
1 lime
4-5 garlic cloves
2 tsp ground cumin
2 tsp paprika
2 tsp chili powder
2 tsp coriander

Start by rubbing the meat with the mixture of spices. Next, pour the beer in the crock pot and add the meat. Slice the onion thick and crack the garlic cloves. Put the onion and garlic on and around the meat. The last step is to add the zest and juice of the lime. Turn on the crock pot and let it cook.

Comming attraction:
In a few short weeks we will be going where we always go in September, Winfield Ks. There is a wonderful festival there every year. We stay there for over two weeks every year in our camper. We also take our large pull behind smoker with us. We don't use it much the rest of the year because of it's large size. You can seriously feed about 150 people out of this thing (I'll put some pictures of the smoker as well as some tips for smoking meat on here soon).

This may be a good time to tell everyone that a meal ain't a meal without onion.
